St. Patrick's Day Bagels

These cheerful green bagels are soft, lightly sweet, and packed with goodness. The fun color comes from spirulina, a nutrient-rich superfood, but the flavor stays mild and kid-approved. They’re perfect for breakfast, lunchboxes, or an after-school snack with no guilt, just smiles!

 

💚🥯Ingredients:

1 cup cottage cheese

1 egg

2 tsp spirulina

1 tbsp vanilla extract

2 tsp baking powder

¼ tsp salt

Spelt flour (about 1–1½ cups, plus extra for dusting)

 

Instructions:

1. Blend the wet ingredients - in a blender, combine the cottage cheese, egg, spirulina, and vanilla extract. Blend until the mixture is smooth and bright green.

2. Mix the dry ingredients- in a mixing bowl, combine the flour, baking powder, and salt.

3. Make the dough- Pour the blended mixture into the bowl with the dry ingredients. Mix everything well until a dough forms.

4. Shape the bagels- form the dough into a ball. Divide it into equal portions (about 4–6). Roll each piece into a rope and connect the ends to create a bagel shape.

** Helpful tips: The dough will be a bit sticky, so keep extra flour nearby. Lightly wetting your hands can make shaping the bagels much easier**

6. Bake: Place the bagels on a lined baking sheet and bake at 375°F (190°C) for 20–25 minutes, or until lightly golden.

7. Cool and enjoy! Let the bagels cool for 10–15 minutes before serving.
